Ingredients:
- 1 prime rib roast (5-6 lbs)
- 4 tablespoons olive oil
- 2 tablespoons fresh rosemary, chopped

- Salt and freshly ground black pepper
Instructions:
- Preheat your oven to 450°F (230°C).
- Rub the prime rib roast with olive oil, then season generously with salt, pepper, rosemary, and garlic.
- Roast for 20 minutes, then reduce the heat to 350°F (175°C) and continue cooking for 1.5-2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare.
- Rest for 10-15 minutes before carving. Slice and serve with a rich au jus or horseradish sauce!
