The 2017 Fitz Brut is Chardonnay-dominant which brings bright, crisp acidity and freshness. Notes of green apple and pear. The mid-palate brings depth and body with mild brioche notes which will develop with age. The length is focused and refreshing. Pair with salmon gravlax, a few capers and maybe some pickled red onion.
