- Soda Water

Ingredients
- 2 oz White Rum
- 1 oz Prickly Pear Syrup (see recipe and instructions below)
- 1 oz Lemon Juice
- Soda Water
- Crushed Ice

Prickly Pear Syrup Instructions
- Mix the prickly pear fruit with the sugar and water in a sauce pan.
- Bring to a slow boil and reduce heat to simmer.
- Allow the mixture to simmer for 30 minutes stirring occasionally.
- Remove from heat and separate the solid using a strainer.
- When the mixture has cooled chill and keep refrigerated.
