    Ingredients

    • 2 oz White Rum
    • 1 oz Prickly Pear Syrup (see recipe and instructions below)
    • 1 oz Lemon Juice
    • Soda Water
    • Crushed Ice

      Prickly Pear Syrup Recipe

      • 1 ½ cups prickly pear fruit
      • 3 cups water
      • 1 ½ cups sugar

       

      Prickly Pear Syrup Instructions

      • Mix the prickly pear fruit with the sugar and water in a sauce pan.
      • Bring to a slow boil and reduce heat to simmer.
      • Allow the mixture to simmer for 30 minutes stirring occasionally.
      • Remove from heat and separate the solid using a strainer.
      • When the mixture has cooled chill and keep refrigerated.
